Caring For Your Cutting Board
The most important step in avoiding food contamination is to wash your cutting board thoroughly with soap and hot water after every use. Wash both sides, even if only one side was used. Coating your slice cutting board with John Boos Mystery Oil before its initial use, and then every month, will help prevent odors and stains from sinking in. Keep your cutting board dry when it is not in use. Moisture is a breeding ground for bacteria. If your wood cutting board begins to show signs of cuts, grooves or deep scratches, it is time to replace it.
Make sure to clean the wood cutting board thoroughly in between chippings, especially if you have been using it for raw meat, chicken, or seafood. As an extra precaution, consider using an occasional bleach rinse on your slice cutting board.
It is also a good idea to disinfect your cutting board, especially if you will be cutting vegetables to eat raw on the slice cutting board that was used for chicken or meat earlier in the day. To disinfect, use one tablespoon of chlorine bleach to one quart of water, cover the surface of the wood cutting board with the solution, and let stand several minutes. If you frequently cook with chicken, consider owning a separating cutting board just for chicken, or even having three wood cutting boards altogether — one for chicken, one for other meat and one for vegetables and fruits — so that you can more effectively prevent cross-contamination while cooking.
